The Vineyard
Bianchet Vineyard is among the oldest vine plantings in the Yarra Valley with the oldest plantings being over 30 years old. Other vineyards of similar age include Mount Mary , Yeringberg, Seville Estate and Yarra Yering. Bianchets Vineyard has been an eclectic mix of varieties with many not planted anywhere else in the Yarra Valley . Over the years varieties such as Semillon, Tokay and Muscadelle have been planted and the removed as they were found to be unsuitable to the cool climate of the Yarra Valley . The 10 acres of plantings current at Bianchet include Cabernet Sauvignon, Cabernet Franc, Malbec, Shiraz , Merlot, Pinot Noir, Chardonnay, Verduzzo and Traminer.
Traminer has been grafted over
to Sauvignon blanc. Traminer has traditionally performed well
but simply was too hard to sell.
Minimal use of herbicides and sprays consistent with the production of premium quality fruit is the philosophy of the vineyard. We do not claim to be organic but do keep chemical usage to a minimum |

The Winery
Bianchet Winery is a boutique operation with attention focused on small individual parcels of fruit. The grapes are hand harvested and crushed and destemmed before being pressed in our 3 tonne capacity airbag press. The juice is settled before ferment in stainless steel tanks or in some cases fermented in barrel.
Red grapes are crushed and destemmed and then fermented in open fermenters with the caps plunged several times daily to extract the colour and tannin from the skins. Post ferment the wines are pressed off, again through the airbag press, before settling and then ageing in oak barrels. |
